I started by preheating the oven to 425 and gathered two rather large russet potatoes. I ran them under cold water to get them squeaky clean and edible and mine was a bit old so I had to cut a few growths off. I sprayed them with cooking spray because I didn't have any olive oil and seasoned them with salt and pepper. I gave them a few good pokes with a fork and threw them in the oven.
While the potatoes were doing their thing in the oven I got the chicken breasts marinated in lemon and herb deliciousness from the fridge and cut them into nice chunks. I chucked it in a pan put the lid on it and let those babies sweat a bit.

Let them cook for four-ish minutes on each side with the lid on and then I moved onto the veg: asparagus and green bell pepper.The dashing bald man in the picture is my roommate Mondo. Lol. Honestly I don't know what kind of magic Mondo made with the veg, but they were delicious and there was some garlic and chili flakes involved.
Then the dinner really started to come together and we ended up with lemon herb chicken, baked potatoes, asparagus and green bell peppers, and green salad with ranch dressing.
I'm trying to up the picture ante so I hope that is working for you my loves. I will be back in full force around Easter because I have a surprise for the boy and I have document the process. :)
